Simple Strawberry Galette
You are going to fall in love with how delicious this simple strawberry galette is! While a traditional galette is usually made with pie dough for the base, in this recipe I opted for a flaky puff pastry.

I promised a simple recipe, so that’s exactly what you’re getting. This is perfect for if you need a fancy looking dessert ASAP and don’t feel like baking or just don’t have time. My boyfriend and I make it when a sweets craving hits; it takes just a few minutes to assemble so we can be eating it in no time!
Here’s everything you’ll need to make a perfect strawberry galette:
- One sheet puff pastry- yes, the frozen store-bought kind!
- Strawberries
- Sugar
If you'd rather use another kind of sweetener instead of sugar, you can absolutely toss the strawberries in honey or maple syrup.
How to make a strawberry galette
STEP ONE: On a lightly floured surface, unfold one sheet of thawed puff pastry. Use a rolling pin to slightly flatten and stretch the puff pastry and then place it on a baking sheet.
STEP TWO: Slice the strawberries and add them to a bowl. Sprinkle them with sugar and toss until they’re coated.
STEP THREE: Arrange the strawberries in the middle of the puff pastry; fold the edges of the puff pastry over toward the middle of the pastry, until it looks like a circle. Bake for about 30 minutes, until the puff pastry is golden.

A big scoop of vanilla bean ice cream, a dusting of powdered sugar, or even a drizzle of honey would be delicious on top of this strawberry galette.

Simple Strawberry Galette
Juicy strawberries wrapped in warm, flaky dough; you can’t go wrong here! This strawberry galette only requires three ingredients and is so easy to make you barely even need a recipe.
- 1 sheet puff pastry (thawed)
- 1 lb strawberries
- 1 tablespoon granulated sugar
- Preheat oven to 375°F. Line a baking sheet with parchment paper; set aside.
- On a lightly floured surface, unfold sheet of puff pastry. Using a rolling pin, roll out the puff pastry to about 1/8” thickness; transfer puff pastry baking sheet.
- Slice strawberries and add to a bowl. Add sugar to the strawberries; toss until coated. Arrange the strawberries in the middle of the puff pastry sheet, leaving about 1-2 inches of a border. Fold up the sides of the pastry all the way around.
- Bake in preheated oven for about 30 minutes, until the puff pastry looks puffed up and golden
Feel free to use honey or maple syrup as a sweetener instead of sugar.
