One bowl, super quick, so delicious!

Besides the deliciousness of these peppermint brownie cookies, I have to say the best part about them is the fact that they’re made in one bowl.

Oh, and you don’t have to chill the dough either.

And? They only take 10 minutes to bake.

You guys this is probably the easiest and fastest cookie recipe I’ve shared yet and I’m so excited about it! Cause when you want cookies, you want cookies. This recipe gets them in your mouth ASAP and it’s a beautiful thing.

Ingredients for peppermint brownie cookies

Peppermint brownie cookies are made from simple pantry staples. Here’s everything you’ll need to make them:

  • Unsweetened cocoa powder
  • Granulated sugar
  • Butter, melted
  • Vegetable oil
  • Egg
  • Vanilla extract
  • All-purpose flour
  • Baking powder
  • Salt
  • White chocolate
  • Candy canes, crushed

How to make peppermint brownie cookies

To make the dough for the peppermint brownie cookies, first combine the cocoa powder, sugar, melted butter, and vegetable oil in a large bowl. Next, beat in the egg and vanilla. Lastly, add in the flour, baking powder, and salt and mix until just combined. Dough is done!

Roll tablespoon-sized balls of dough out and place them on a parchment-lined baking sheet. Transfer them to the oven and bake them for 10-12 minutes. Be careful not to over-bake, or they’ll dry out and lose their fudgyness!

Decorating peppermint brownie cookies

Once the cookies are out of the oven and completely cooled, it’s time for the fun part- decorating!

STEP ONE: crush the candy canes

Either while the cookies are baking or cooling, go ahead and crush up some candy canes. They sell pre-crushed candy cane at the store, but in case you can’t find it or prefer to crush your own (like me) break out a plastic bag and a rolling pin and get crushing!

simply add some candy canes (about 6) to a plastic bag, seal it, and place on a counter or another hard surface. Grab a rolling pin, meat mallet (smooth side), or anything else big and heavy and use it to crush the candy canes into pieces.

Crushing the candy cane yourself is also great for if you want to have control over how big or small your peppermint pieces are.

STEP TWO: melt the white chocolate

For the white chocolate, I used white chocolate melting wafers. If you can’t find them, you can totally use a chopped up white chocolate bar or white chocolate chips instead.

Add the white chocolate to a microwave safe bowl and microwave in 30 second intervals, stirring between each until the chocolate is completely melted.

STEP THREE: dunk and sprinkle

Dunk half of the cookie in the white chocolate and place it on a parchment-lined baking sheet or platter. While the chocolate is still wet, sprinkle some of the crushed peppermint onto the half that’s dipped in chocolate.

Allow the cookies to sit until the chocolate has completely hardened, about 10 minutes.

Do I have to use white chocolate?

Nope! These would also be so good dipped in dark or milk chocolate! Chocolate on chocolate is never a bad idea.

Peppermint Brownie Cookies

Like a brownie in cookie form, these fudgy little bites are dipped in white chocolate and sprinkled with crushed candy cane… kind of like brownies and peppermint bark had a baby. The best part? They can be made in one bowl.

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup butter (melted)
  • 3 1/2 tbsp vegetable oil
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 5 oz white chocolate (melted)
  • 1/2 cup 5-6 candy canes crushed
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, combine cocoa powder, sugar, melted butter, and vegetable oil. Beat in egg and vanilla until fully incorporated. Add in the flour, baking powder, and salt. Mix until just incorporated.
  3. Roll out tablespoon-sized balls of dough and place them on prepared baking sheet. Transfer to preheated oven to bake for 10-12 minutes.
  4. Once baked, allow the cookies to cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
  5. Once the cookies are completely cooled, dip half of the cookie in the melted chocolate. While the chocolate is still wet, sprinkle on the crushed candy cane. Allow the chocolate on the cookies to sit and dry for about 10 minutes.
