What is birthday cake remix?
So, for those of you who haven't experienced the magic, birthday cake remix is a signature flavor at the ice cream chain Coldstone. The flavor features brownies, chocolate syrup, and rainbow sprinkles mixed into cake batter ice cream.
The original version doesn’t include yellow cake like this recipe here, but when I go I always order it with yellow cake added because it takes it to the next level- and it is birthday cake remix, after all! It’s pretty much the only thing I get at Coldstone.
What is no-churn ice cream?
Because it doesn't involve the long process of churning like traditional ice cream, no-churn ice cream is super easy to make! The base of no-churn ice cream is made with just a few ingredients, the main ones being heavy whipping cream and sweetened condensed milk.
The heavy cream is whipped into stiff peaks (to create whipped cream) and then mixed with the condensed milk and other flavors. Then, it’s frozen and BAM! You’ve got ice cream.
Can I use store bought brownies and cake for this ice cream?
Please do! Making brownies and cake from scratch for this recipe would be too time consuming. If your grocery store bakery has brownies and/or cake already made, definitely use that! Otherwise, you can make box mix brownies and box mix yellow cake.
What do I need to make no-churn birthday cake remix ice cream?
Here’s everything you’ll need to make this recipe:
- Heavy whipping cream
- Sweetened condensed milk
- Butter: this gives the ice cream a rich, buttery cake flavor
- Vanilla extract
- Almond extract
- Brownies
- Yellow cake
- Rainbow sprinkles
- Chocolate syrup
What should I freeze the ice cream in?
To freeze the ice cream, you can use a metal loaf pan, metal cake pan, or even plastic Tupperware. Just cover with plastic wrap or Tupperware lid.

Birthday Cake Remix No-Churn Ice Cream (Coldstone Copycat!)
Whether or not you’ve tried the iconic Coldstone flavor birthday cake remix, you are going to love this homemade version! Cake batter ice cream is loaded with brownie bits, yellow cake, chocolate syrup, and sprinkles for the ultimate ice cream flavor!
- 2 cups heavy whipping cream
- 14 ounces sweetened condensed milk (one can)
- 5 tbsp unsalted butter (melted)
- 1 tbsp vanilla extract
- 1 tsp almond extract
- 1 ½ cups brownie (chopped into small pieces)
- 1 ½ cups yellow cake (chopped into small pieces)
- ½ cup rainbow sprinkles
- drizzle of chocolate syrup
- Using a hand mixer or a stand mixer with the whisk attachment, whip the 2 cups of heavy cream until stiff peaks form. Be careful not to over-whip! The cream is done when you can pull the whisk out and the cream stands up.
- In a bowl, whisk together sweetened condensed milk, melted butter, vanilla, and almond extract. Using a rubber spatula, add the condensed milk mixture to the whipped cream; mix until thoroughly combined.
- Add half the ice cream mixture to a container (metal loaf pan, Tupperware, etc.) Sprinkle on half the brownie bits yellow cake, sprinkles, and add a drizzle of chocolate syrup on top. Add the other half of the ice cream, top with remaining toppings and chocolate syrup drizzle.
