Honey florentines are such a unique cookie and so easy to make! If you like honey, you will love these!

What is a Florentine?

Florentines are thin, crispy cookies typically made of nuts, butter, and sugar. The cookies are baked to create a candy-like wafer. Florentines sometimes are called lace cookies because of the lace-like pattern that turns up on the cookie after baking!

The main ingredient in these particular florentines is honey. Because of this, the sugars crystalize as the honey is cooked, and the outcome is a sort of crispy, candied honey cookie.

These cookies are seriously so simple to make! There are only 5 ingredients:

  • Unsalted butter
  • Brown sugar
  • Honey
  • Flour
  • Salt

How to make honey Florentines

First, preheat the oven to 375°F.

STEP ONE: melt

To make the base for honey florentines, start by melting together the butter, brown sugar, and honey.

Once everything is combined, transfer the mixture to a medium bowl and add the flour and salt and whisk to combine.

STEP TWO: bake

Working quickly, drop 1/2 teaspoon sized dollops of batter onto a large baking sheet lined with parchment paper. Place them at least 3 inches apart on the baking sheet, as they will expand considerably while baking.

Bake the cookies until they turn golden brown and crisp, about 6-8 minutes. Let the florentines cool on baking sheets on wire rack.

Remove the florentines from the parchment paper carefully with your fingers after they have cooled completely.

Tips

You can store the honey florentines between layers of parchment paper in airtight containers for up to 3 days.

A lot of florentines have the backs dipped in chocolate, or decorated with a drizzle of chocolate. If you want to decorate these, I think white chocolate would go pretty well on them!

  • 2 tablespoons unsalted butter
  • 2 tablespoons light brown sugar (packed)
  • 1 1/2 tablespoons honey
  • 2 tablespoons all-purpose flour
  • Pinch coarse salt
  1. Preheat oven to 375°F. Melt butter, brown sugar, and honey in a small saucepan over medium-low heat. Transfer to a bowl and whisk in flour and salt until combined.
  2. Drop 1/2 teaspoon sized dollops of batter onto large baking sheets lined with parchment paper, spacking at least 3 inches apart. Bake cookies until they spread and turn golden brown, about 6-8 minutes. Let florentines cool on sheets on wire racks. With your fingers, carefully remove florentines from baking sheets. Store between sheets of parchment paper in airtight containers for up to 3 days.
