Gooey Chocolate Chip Blondies
GOOEY CHOCOLATE CHIP BLONDIES ARE BETTER THAN CHOCOLATE CHIP COOKIES
I would never hate on the classic chocolate chip cookie, but hear me out- chocolate chip blondies are everything you love about CCC’s and nothing you don’t love about CCC’s.
For example:
- You don’t have to chill the dough
- You don’t have to worry about leaving the butter out to soften because Gooey Chocolate Chip Blondies use melted butter!
- There’s no scooping and rolling individual dough balls or having to bake in batches- chocolate chip blondies are cooked in one pan.
- Gooey Chocolate Chip Blondies always come out sooooo soft and thick- if you’re a fan of undercooked, warm & gooey CCC’s this will be your new favorite recipe.
Chocolate chip cookies and blondies are very similar in taste and ingredients. Both use brown sugar, vanilla, and butter as their key ingredients.
Blondies are just a different texture- they remind me of super rich, buttery cookie bars.
HERE’S WHAT YOU’LL NEED
To make these blondies, you’ll need a few ingredients, most (or all) of which you probably already have. You’ll need:
- Unsalted butter
- Brown sugar
- Granulated sugar
- Eggs
- Vanilla extract
- All-purpose flour
- Cornstarch
- Baking powder
- Salt
- Chocolate chips/chocolate chunks
Fun fact: Some of the ingredients that make these Gooey Chocolate Chip Blondies so soft and chewy are the melted butter, corn starch, extra egg yolk, and brown sugar. Shoutout to them!
HOW TO MAKE GOOEY CHOCOLATE CHIP BLONDIES
First of all, you need to prepare the pan. These blondies are baked in a 13x9in pan. My preferred way of preparing the pan is to line it with parchment paper.
Cut the parchment down to the size of the pan, but leave two longer flaps of overhang on either side of the pan (length-wise) so that you can easily lift the blondies out of the pan when they’re done baking. You’re going to want to grease the pan with cooking spray/butter, before laying the parchment, since the grease helps the parchment to stick to the pan. Be sure to grease the uncovered sides of the pan as well!
The cooking time for these blondies is 30-35 minutes. Depending on what kind of pan you use, it will be longer or shorter. For example, if you use a glass pan, the cooking time might be a bit longer. If you use a dark colored metal pan, it may be shorter, or just around 30 minutes. This is because dark metal pans absorb heat quicker than light colored pans.
Now for the fun part- the batter! This recipe is super easy, quick, and straightforward.
You’re going to melt the butter and combine it with your brown and white sugar, and then add the rest of the wet ingredients- eggs, egg yolk and vanilla. Then, mix in your dry ingredients. Once that’s all combined, fold in your chocolate. Finally, transfer the batter to your prepared pan and bake!
CHOCOLATE, CHOCOLATE, CHOCOLATE!
Keep it classic and use semi-sweet chocolate chips, or switch it up and use a cut up chocolate bar, chocolate chunks, mini chocolate chips, or chocolate melts!

Gooey Chocolate Chip Blondies
Arguably better than a chocolate chip cookie, Gooey Chocolate Chip Blondies are all the best parts of a cookie, put into bar form- they’re soft, thick, gooey, and packed with chocolate! OH and they are so simple to make.
- 2 1/2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup unsalted butter (2 sticks, melted)
- 1 1/4 cups brown sugar (packed)
- 1/2 cup granulated sugar
- 2 eggs + 1 egg yolk
- 2 teaspoons vanilla extract
- 2 cups chocolate chips
- Preheat oven to 350°F and line a 13x9 pan with parchment paper, or grease and flour the pan.
- In a medium bowl, whisk together flour, cornstarch, baking powder, and salt. Set aside.
- In a large bowl with a hand mixer or bowl of a stand mixer, add melted butter and sugar and mix until combined.
- Add eggs, egg yolk, and vanilla extract to the butter and sugar mixture and stir until combined.
- Gradually stir the dry ingredients into wet until completely combined.
- Fold in chocolate chips using a rubber spatula.
- Spread the batter into prepared pan and transfer to oven.
- Bake at 350°F for 30-35 minutes, or until the edges are lightly browned and the middle looks set.
- Allow to cool before slicing and enjoying!
