- Cornstarch: thickens the dough making them extra chewy
- Melted butter: aslo contributes to a chewier bake
- Brown sugar: has much more moisture than granulated sugar, making for a softer, moister cookie bar
- Extra egg yolk: makes the cookie bars thicker, richer, and chewier because of the extra fat.

Totally! I think white chocolate chips would be delicious in these cookie bars. You could do chopped chocolate or chocolate chunks too!
Do I need a mixer to make these?
Nope! you can use one if you want, but I usually make these by hand with a whisk. They are super quick and easy to throw together and aren’t any trouble to mix by hand.
How to make funfetti cookie bars
Let’s lay out all the steps you’re going to need to follow to whip up these delicious cookie bars:
STEP ONE: prep
First, you’re going to need to preheat the oven to 350°F. Next, line a 13x9 inch pan with parchment paper.
Tip: spray the bottom of the pan with nonstick spray before laying down the parchment paper- it helps it stick!
STEP TWO: mix dry ingredients
In a medium bowl, combine your dry ingredients: flour, corn starch, baking powder, and salt. Whisk to combine and set aside.
STEP THREE: mix wet ingredients
In a large bowl, add the brown sugar and granulated sugar.
Pour in the melted butter and whisk until everything is combined.
Next, add in the eggs and egg yolk and the vanilla and whisk to combine once again.
STEP FOUR: combine
Add the dry ingredients to the wet ingredients and mix mix mix.
Lastly, the fun part: add in your sprinkles!! I suggest using 1 1/2 cups of sprinkles, but you can use less or more, depending on your preferences.
STEP FIVE: bake!
Add the dough to your prepared pan and bake the funfetti cookie bars for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Tip: Depending on what kind of pan you use, the baking time will be longer or shorter. For example, if you use a glass pan, the cooking time might be a bit longer. If you use a dark colored metal pan, it may be shorter- this is because dark metal pans absorb heat quicker than light colored pans.

- 2 1/2 cups all-purpose flour
- 2 teaspoons cornstarch
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup unsalted butter (melted)
- 1 1/4 cups brown sugar (packed)
- 1/2 cup granulated sugar
- 2 eggs
- 1 egg yolk
- 2 teaspoons vanilla extract
- 1 1/2 cups rainbow sprinkles
- Preheat oven to 350°F and line a 13x9 pan with parchment paper, or grease and flour the pan.
- In a medium bowl, whisk together flour, cornstarch, baking powder, and salt. Set aside.
- In a large bowl, add brown sugar, granulated sugar, and melted butter. Mix until combined. Add eggs, egg yolk, and vanilla extract to the butter and sugar mixture and stir until combined.
- Gradually stir the dry ingredients into wet until completely combined. Add in the sprinkles and fold in with a rubber spatula.
- Spread the batter into prepared pan and transfer to oven. Bake at 350°F for 25-30 minutes, or until the edges are lightly browned and the middle looks set.
