Chipotle Copycat Pico de Gallo
The truth is, I don’t have enough money to have this pico de gallo every day like I want to, and even if I did, Chipotle is like, way too far away from me anyway. But here’s the good news: this mild salsa is extremely simple to make at home. You only need a few ingredients, and the only prep work involved is chopping things up! It’s only 6 ingredients:
- tomatoes
- red onion
- jalapeño
- cilantro
- lime juice
- salt
You can pretty much use any tomatoes for this. I used beefsteak tomatoes because they’re huge and they were the ones that looked the best at the store when I went. Roma tomatoes are a great option too! If you use Roma tomatoes, double the amount of tomatoes for this recipe, since Roma tomatoes are smaller than the beefsteak ones I used here.
If you want a truly mild salsa, make sure you remove the seeds and the membrane from the jalapeño. If you like it ~ spicy ~ leave them in!
This pico de gallo is good on basically anything. Eat it plain with chips, add it to your homemade burrito bowls, serve it with eggs, or put it on my Shrimp Tacos With Creamy Cilantro Garlic Sauce. SO GOOD!
Chipotle Copycat Pico de Gallo
Chipotle Copycat Pice de Gallo is super fresh and flavorful, and tastes just like Chipotle's!
- 2 large ripe beefsteak tomatoes (diced into 1/4” pieces)
- 1/2 red onion (diced)
- 1 jalapeño (diced (scrape out the seeds and membrane for mild salsa, leave them in for hot salsa))
- juice of 1 lime
- 1/4 cup cilantro (finely chopped)
- 1 tsp salt
- Dice your 2 tomatoes, 1/2 red onion, 1 jalapeño, and 1/4 cup cilantro. Add everything to a medium bowl.
- Add 1 tsp of salt, and squeeze the lime juice over the ingredients. Stir to combine.
