Cherry Almond Blondies

I’m so glad you’re here, and you’re about to be glad you’re here too because these cherry almond blondies are INSANELY good. Like… wow.
Biting into a thick, buttery, chewy, soft blondie is seriously sooo satisfying. And I’m a huge fan of anything that has almond flavor in it so basically these made all my dreams come true.
Sprinkled throughout this rich buttery batter are juicy, tart cherries and creamy white chocolate chips, which compliment the almond flavoring soooo well. The cherries, white chocolate, and almond taste like they were destined to be together. And if that sounds dramatic… that’s because it is. But it’s still accurate.
If you’ve never had a blondie, they are basically brownies without the chocolate, and are made with brown sugar instead of just white sugar, so they have a rich vanilla flavor instead of a chocolatey flavor.
Some of the ingredients that make these so soft and chewy are the melted butter, corn starch, extra egg yolk, and the brown sugar. I also add the three extra tablespoons of flour as you can see below in the recipe, because the cherries we are putting in have lots of extra moisture and the flour will help absorb some of it!
Speaking of the cherries… pitting them might seem like a pain in the butt, and it will turn your fingers red for a little bit, but it’s so worth it for their amazing taste! You only need a cup, so it actually doesn’t take too long. To pit my cherries, I cut them down the middle, twist them apart, and just pop out the pit by digging my thumb underneath and pulling it back out.
If white chocolate isn’t your thing, I think some sliced almonds would also be very good in this recipe as a replacement!
If white chocolate is your thing, drizzle some over the top of the finished blondies to be extra fancy!
Cherry Almond Blondies
- 1 cup unsalted butter (melted)
- 1 1/4 cups brown sugar (packed)
- 1/2 cup sugar
- 2 eggs
- 1 egg yolk
- 2 teaspoons almond extract
- 2 1/2 cups plus 3 tablespoons flour
- 2 teaspoons cornstarch
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup fresh cherries (pitted and chopped into quarters)
- 1 cup white chocolate chips
- Preheat oven to 350°F and line a 13x9 pan with parchment paper, or grease and flour the pan.
- Combine melted butter and sugar in a large bowl.
- Add eggs, egg yolk, and almond extract and stir until combined. Set aside.
- In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.
- Gradually stir the dry ingredients into wet until completely combined.
- Fold in white chocolate chips and cherries using a rubber spatula.
- Spread the batter into prepared pan and transfer to oven.
- Bake on 350° for 30-35 minutes, or until the edges are lightly browned and the middle looks set.
- Allow to cool before slicing and enjoying!
